Recipe: Curried Tofu

½ cup vegetable broth
3 T rice vinegar
2 t olive oil
2 T soy sauce
4 T curry powder
1 t cumin seeds
1 T mirin/sweet white wine
1 pound extra-firm tofu, pressed and sliced into 8 pieces ( cut it thru the middle horizontally and then with 2 diagonals vertically)

Preheat oven to 400 *F
Blend marinade ingredients then marinade tofu (I like zip-locks bags) for 60 minutes minimum.
Place the tofu on a baking sheet a single layer thick. Back for 20 minutes, then flip and bake for another 20 minutes. Place in broiler for extra chewiness.
