Recipe: Tamarind Lentils

2 t coconut oil

3 cloves garlic, minced

1” cube of ginger, minced

1 onion, diced

1 t garam masala

½ t cumin seeds

1 t cumin powder

1 cup dried red lentils

2 cups vegetable broth

2 t tamarind paste

1 T maple syrup

2 T tomato paste

½ t salt


Saute spices in oil until fragrant. Then add garlic and ginger until lightly browned, then add the onion. Saute the onion until transparent. Add lentils and broth, bring to a boil and then cover and simmer for 25 minutes. Stir occasionally until tender. Add tamarind, syrup, tomato sauce, and salt. Simmer another 5 minutes.
