'Modified' American Potato Salad
SERVES 4


4 medium potatoes
1 T cider vinegar
1/4 cup nayonaisse
1/4 t celery seed
1/4 t dry mustard
2 t hot water
2 celery stalks, chopped
1 red bell pepper, chopped
1/2 medium onion, diced
4 baby gherkins, cut into smal slices
scallions, thinly sliced (optional)
1/2 T parsley, chopped
pinch paprika

Boil potatoes and once tender but still warm, chop them into 1" cubes. Drizzle with vinegar then set aside.

Combine nayonnaise, celery seed, mustard, 1/2 teaspoon of salt, and black pepper in a large bowl; whisk to combine. Thin mixture with hot water, if desired. Stir in reserved potatoes, celery, red pepper, onion, pickles, scallions, and chopped parsley. Chill for 30 minutes before serving. Garnish with paprika.
