The Lazy Vegan: Moroccan Carrot Salad

So summertime is an especially lazy time. I mean really... who wants to be anywhere near a heat source when its 85* and up? I don't. So here is a ridiculously easy salad and a healthy sweet alternative to coleslaw. If you are serving it immediately, feel free to add some chopped granny smith apples. Yum.




Moroccan Carrot Salad
SERVES 4
4 carrots, grated
1 can mandarin oranges in water
3 T roasted sunflower seeds
1/4 t cinnamon
1/4 c. raisins
pinch of salt (optional)
1/2 t olive oil
1 t lemon juice (to taste)
Place ingredients in bowl and combine. Serve by itself or on top of a bed of spring greens.
