So summertime is an especially lazy time. I mean really... who wants to be anywhere near a heat source when its 85* and up? I don't. So here is a ridiculously easy salad and a healthy sweet alternative to coleslaw. If you are serving it immediately, feel free to add some chopped granny smith apples. Yum.

| 4 carrots, grated | |||||||||||||||
| 1 can mandarin oranges in water | |||||||||||||||
| 3 T roasted sunflower seeds | |||||||||||||||
| 1/4 t cinnamon | |||||||||||||||
| 1/4 c. raisins | |||||||||||||||
| pinch of salt (optional) | |||||||||||||||
| 1/2 t olive oil | |||||||||||||||
| 1 t lemon juice (to taste) | |||||||||||||||
| Place ingredients in bowl and combine. Serve by itself or on top of a bed of spring greens. | |||||||||||||||
