Vegan Banana-Wheat Germ Muffins(From the Veganomicon)
Makes 12 Muffins
1 c plain soy milk (I used Silk Light Plain Soymilk)
1 t apple cider vinegar
2 very ripe bananas
1/3 c canola oil
1/4 c sugar
1 t vanilla extract
1 1/4 c whole wheat flour
3/4 wheat germ
1/2 T cinnamon
1/2 T pumpkin pie spice
2 t baking powder
1/2 t salt
Preheat oven to 375* and lightly grease 12-cup muffin tin.
Pour the soymilk and vinegar into a bowl to curdle.
Mash the bananas in a large bowl. Add soymilk to bananas, as wel as sugar, oil and vanilla. Mix well.
In a seperate bowl, mix together flour, wheat germ, cinnamon, baking powder, and salt. Add this to banana mixture and gently stir the ingredients, until the dry mix is just moistened.
Fill the cups evenly and bake for 22 minutes.
