The Lazy Vegan: Roasted Red Pepper and Corn Chowder

Serves 4

INGREDIENTS

1 box Trader Joes's Roasted Red Pepper and Corn Soup (contains honey)
1 can of sweet corn
1 pkg (4 servings) frozen Potato Gnocchi, cooked
3 cloves of garlic, minced
1 medium onion, thinly sliced
olive oil
freshly ground pepper


PREPARATION
First, Carmelize the onion and cook your gnocchi.
Then in a large pot, saute the garlic in a small amount of olive oil. When that is nicely browned and fragrant toss in your box o' soup. Add the can of corn, the gnocchi, and the onions. Let all of this simmer down into a thicker chowder-like consistency. Season with pepper.
Devour.
